A SOUTHERN COMFORT FOOD

Pimento cheese is a comfort food in the South. I am told it only exist in the South, not sure about that. It has long been a staple in the South at picnics, church pot lucks, or as funeral food.
When I was a little girl,I attended a country school for my first four years. Every morning, before school, my mother made me a pimento cheese sandwich to take for lunch and I would buy a carton of chocolate milk from the cafeteria to drink with it. She made the pimento cheese from scratch. Even had to grate the cheese, because you could not buy shredded cheese from the grocery store back in those days.

So, I was excited to find this recipe on another blog. I know that she did not put onion powder, red pepper, or Worcester sauce. But who knows it might still be good with all of that added. I do know for sure that she added sugar.

I need to write my mother and have her write down her recipe for me.



Southern Pimento Cheese

8 ounces extra sharp cheddar
8 ounces American cheese or white cheddar
1/2 cup mayonnaise
2 ounce jar of whole pimentos
1/2 teaspoon sugar
1 1/2 teaspoon Worcestershire sauce
Dash of onion powder
Dash red pepper

Blend pimentos and cheese in food processor until well blended.
Add dry ingredients and mayonnaise and blend.
Last add Worcestershire sauce.
Add more mayonnaise as needed for preferred consistency.
Scrape sides of bowl to ensure well-blended texture.

There was also a recipe for cooked pimento and cheese, which I have never eaten or even heard of.

Cooked Pimento Cheese

2 tablespoons sugar;
3 tablespoons mayonnaise;
1 small jar pimentos, chopped;
2 tablespoons butter;
1 tablespoon sweet pickle juice;
1/4 cup milk;
1 pound Velveeta cheese

Combine in medium saucepan, all ingredients except pimentos.
Cut cheese into small blocks and let melt over medium heat with other ingredients in saucepan.
When cheese is melted combine pimentos with mixture.
Stir and store in the refrigerator.

REALLY FELT LIKE SPRING TODAY

The last time I checked today the temperature was 75. It was a little windy, but it was still a beautiful day. It really felt like Spring is just around the corner.
K and A came by and spent most of the afternoon and stayed for dinner. We ended up grilling hamburgers since it was so nice out.
K was trying to get A to sleep and I had fixed the pack and play for her to put her down and Lulu jumped in like she was sure that I fixed it just for her. I thought it made a cute picture.
A didn't end up sleeping very much even though she was sleepy. With her little bottom in the air. She looks very comfortable. Yes, we know you are not suppose to put them on their tummy now, but someone was watching her the whole time.

Pappa has more luck keeping her happy than I do.

BIRTHDAY DINNER

Hubby's birthday was yesterday, but we didn't get to celebrate until tonight. Because yesterday morning, he got up at 4:30 and flew to Dallas and didn't get home until after 9:00 last night. So, tonight K and A met us at the Saddle Creek Restaurant in North Little Rock. J had classes.


A slept through the whole dinner.


After we ate we went back to K and J's and had cake from Baskin and Robbins. J was through with his classes and joined us.
Pappa is keeping A entertained and she is cooing at him.

Isn't her little outfit cute on her.

The cake was very good.

LOOKING A TINY BIT LIKE SPRING

The temperature has been in the sixties most of this week. We have also had rain this week. So, when I looked out this morning I noticed that our Maple out back and our Bradford Pear in the front yard was beginning to put out. I am sure we will have a freeze in the next two weeks that will kill the buds, but at least it's beginning to look a little like Spring.

Even though I spent ten years of my life growing up on a farm, I never noticed things like trees until we bought our first house. That first house was in Little Rock. I remember the trees had begin to put out like this year and the next week we had a freeze. I called my mother upset asking her if that meant the trees were dead for the whole Summer. She told me know that they would put out again. I guess I also didn't listen when we studied about trees in school.

GRANDDAUGHTER A

I think this is my favorite picture so far of my granddaughter A. She is in her car seat going to her first appointment with her pediatrician. She is ten days old in this picture.

My youngest daughter K, granddaughter A and myself went to Applebee's today to eat and then to Wal-Mart to buy a pack and play. It will just make it so much easier when A is visiting Momo and we won't have to worry about our cat, Lulu bothering her. Lulu likes to just look at her and sniff her and if she moves then Lulu wants to jump up beside her.

A was kind of fussy today. K thinks it is because she is having to supplement with formula and the formula is upsetting her stomach. But A goes back to the pediatrician on Friday for a check-up, so maybe she will get straightened out.

Hopefully I will have some new pictures to post later this week of A.
